Carrot-apple cabbage coleslaw

Ingredients:

For the coleslaw:

    ½ small red cabbage, sliced

    2 cups carrots, shredded

    1 red apple, sliced

    ½ red onion, chopped

    ½ cup fresh parsley, chopped

    ¼ cup pumpkin seeds

For the dressing:

    1 cup Greek yogurt

    1 tablespoon Dijon mustard

    1 teaspoon ground cumin
