2 cups onion, diced

2 cloves garlic, minced

8 cups butternut squash, cubed

1 apple, peeled and chopped

4 cups reduced-sodium chicken broth

1 teaspoon kosher salt

½ teaspoon paprika

½ teaspoon coriander

¼ teaspoon cinnamon

¼ cup sour cream

4 teaspoons milk of choice

¼ cup pistachios, shelled
Directions:
- Spray a large pot with olive oil cooking spray.
- Add onion to pot and sauté until tender and translucent, about 5 minutes.
- Add garlic and cook for 1 minute until fragrant.
- Add butternut squash, apple, chicken broth, and spices; stir to combine.
- Bring the pot to a boil, cover, and reduce to medium-low heat.
- Cook for 30 minutes. The vegetables should be fork tender.
- Transfer mixture to a blender.
- Blend mixture until smooth and creamy.
- Combine sour cream and milk; drizzle on top of each serving of soup. Top with pistachios.
