Recipe: seafood-stuffed mushrooms

Looking for the perfect finger food to serve to friends and family? Not only are mushrooms low in calories, they’re considered a superfood, packed with vitamins B and D, protein and fiber. Filled with shrimp, crab and gooey cheese, these bite-sized gourmet treats are sure to be a delicious crowd pleaser.

Ingredients:

6 ounces cream cheese, room temperature

1/4 cup mayonnaise

1 can (6 ounces) crab meat, drained

1 cup cooked shrimp, finely chopped

1/4 cup grated Parmesan cheese

1/2 cup grated sharp cheddar cheese

1 teaspoon Dijon mustard

1 tablespoon chopped fresh parsley

1/2 teaspoon onion powder

1/4 teaspoon garlic powder

30-36 large white button mushrooms, washed and with stems removed

 

Directions:

1. Line a baking sheet with parchment paper and preheat your oven to 375°F. 

2. In a large mixing bowl, combine all ingredients except mushrooms. Stir until mixture is well combined.

3. Use a spoon to press filling into the center of each mushroom, creating a small mound on top.

4. Place filled mushrooms on prepared baking sheet and put into the refrigerator for at least 30 minutes.

5. Once cooled, remove mushrooms from fridge and bake for 20 minutes or until golden brown.

6. Let them rest for five minutes, then serve. Enjoy!
